Salal Mocktail

Salal Berry Syrup Ingredients:
2 cups salal berries 
1 cup water
1 cup brown sugar
2 tsp lemon juice
2 tsp vanilla 
 
Instructions:
In a small saucepan, bring salal berries, water, brown sugar, vanilla and lemon juice to a low boil. Then, reduce heat to simmer, stirring occasionally. Simmer for about 10-15 minutes, or until the syrup begins to thicken to a “syrupy” consistency. 

Mocktail Ingredients:
1.5 oz salal berry syrup
1/2 oz fresh lemon juice
1/2 oz simple syrup or honey (optional)
3-4 fresh mint leaves (optional)
Ice cubes
3 oz sparkling water
Garnish: mint sprig, lemon wheel, or berries

Instructions:

  1. Prepare salal juice (simmer and strain berries).
  2. Muddle mint leaves in a shaker (optional).
  3. Add salal juice, lemon juice, and sweetener to shaker.
  4. Add ice and shake well.
  5. Strain into a glass with fresh ice.

Salal berry (Gaultheria shallon) are a traditional food of coastal First Nations. Salal has been described as a “superberry” with exceptionally high proanthocyanidin content (Ferguson et al., 2018).

Lavender Mocktail

Lavender syrup:

1 cup granulated white sugar
1 cup water
1/4 cup dried lavender buds (culinary grade)

Instructions:

  1. Simmer. Heat the sugar and water in a small saucepan over high heat, stirring frequently, until the mixture reaches a simmer. Continue stirring until the sugar has completely dissolved.
  2. Steep. Remove pan from the heat. Stir in the lavender and let the mixture steep for 15 minutes.
  3. Strain. Pour the mixture through a fine-mesh strainer* into a heat-safe jar. Let cool until the syrup reaches room temperature, then cover and refrigerate for up to 2 weeks.

Mocktail Ingredients:
1 oz Lavendar syrup
1/2 oz simple syrup or honey (optional)
Ice cubes
3 oz sparkling water
Garnish: mint, berries

Instructions:

  1. Prepare lavender syrup
  2. Add syrup and sweetener to a cup with ice
  3. Stir
  4. Add garnish
